How to make it

  • In a medium saucepot, heat the oil and butter.
  • Add the onion, ginger and garlic.
  • Reduce heat to medium and cook for 5 minutes.
  • Add the papaya and cook an additional 4 minutes.
  • Add the cider vinegar, water, sugar, cloves, allspice and hot sauce.
  • Bring to a boil and reduce to simmer.
  • Cook for 20 minutes, or until thickened. Purée in food processor and cool completely.
  • Makes 2 cups.

    this sounds wonderful! I love a good allspice flavor in my ketchup and I love papaya and I am thoroughly frustrated with driving 35 miles to the closest Trader Joes to get ketchup that agrees with my taste buds (still not enough allspice, but at least clean and fresh and not corn syrupy)! My kids are gonna freak though if they find out I turned two whole perfectly good papayas into a condiment:)!
