How to make it

  • In a large fry pan heat 2 TBS olive oil on medium heat and saute Italian sausage until brown on both sides. Set aside on a plate. Add a little more olive oil and saute the lamb shank/shanks just until a little color forms. Remove and set on plate with sausages.
  • In a large stock pot heat 2 TBS olive oil on low heat and add the onion and saute for 10 minutes. Add the garlic and saute for another 5 minutes. ( do not let onion or garlic brown). Add the anchovy paste and stir for 30 seconds. Add a little of the tomato sauce just to incorporate. Add the 8 cups of tomato sauce, pork shoulder bone,lamb shanks, italian sausages and turn heat up to medium- low till you get a low simmer ,stir every 5-10 minutes and don't let sauce stick to bottom of pan. Cook for 2 hrs on a low simmer then add the basil and oregano ( rub herbs harshly between hands and allow to drop into the pot) Cook for another hour or until pork falls off the bone. Remove pork bone and lamb shanks from pot and pick meat from bone and add back to the sauce. Add the parmesaan and mix well.
  • Serve with cooked spaghetti or mostaccoli.

    I have to try this with the lamb addition - never thought to add that...would give the sauce an extra rich flavor, I'm sure! This is a great idea - thanks so much for sharing your sauce recipe (I always love to try a new one!).

    Sounds good, but I've never cared for lamb. Just the taste, too mealy. If that's a word? Anyway?
