My spaghetti sauce

- 8 cups of tomato sauce ( I prefer pagliachi) shopping list
- 1/2 lb lamb shanks shopping list
- 4 italian sausage (I prefer to make my own that are spicy) shopping list
- 1 bone from a pork shoulder with 1 in meat still on it shopping list
- 1/2 cup chopped onion shopping list
- 5 cloves chopped garlic shopping list
- 2 TBS dried basil shopping list
- 1 TBS dried oregano shopping list
- 1/4 cup of parmesaan cheese ( canned) shopping list
- 1/4 cup extra virgin olive oil shopping list
- 1 TBS anchovy paste shopping list
How to make it
- In a large fry pan heat 2 TBS olive oil on medium heat and saute Italian sausage until brown on both sides. Set aside on a plate. Add a little more olive oil and saute the lamb shank/shanks just until a little color forms. Remove and set on plate with sausages.
- In a large stock pot heat 2 TBS olive oil on low heat and add the onion and saute for 10 minutes. Add the garlic and saute for another 5 minutes. ( do not let onion or garlic brown). Add the anchovy paste and stir for 30 seconds. Add a little of the tomato sauce just to incorporate. Add the 8 cups of tomato sauce, pork shoulder bone,lamb shanks, italian sausages and turn heat up to medium- low till you get a low simmer ,stir every 5-10 minutes and don't let sauce stick to bottom of pan. Cook for 2 hrs on a low simmer then add the basil and oregano ( rub herbs harshly between hands and allow to drop into the pot) Cook for another hour or until pork falls off the bone. Remove pork bone and lamb shanks from pot and pick meat from bone and add back to the sauce. Add the parmesaan and mix well.
- Serve with cooked spaghetti or mostaccoli.

This is a delicious sauce I agree with you making your own hot sausage is wonderful. Love the addition of the lamb shanks.
