I made quinoa crepes today using quinoa
flakes, an egg, skim milk & honey. They were delicious with crab salad & rarebit sauce. I think the flakes have a nuttier flavor & texture better for non-sweet fillings.

Okay, I live in the land of "back to basics" -- no orange juice concentrate here. How much water does a half cup concentrate usually need? If I replace the water and concentrate with a cup of juice, will the consistency/flavour be the same? Welcome to my life as a fledgling cook... replace, substitute, recreate.
Also... has anyone tried freezing these?

I have to try this recipe! I love that it's dairy-free and the orange juice and cardamom sound really tasty in it.
