So much more than cabbage, and very pretty too. People who dislike salad get enthusiastic about this.

Ingredients
  • 1/2 head radicchio (you could probably use red cabbage, but the flavor would be different)
  • 6 carrots, peeled
  • 1/2 head Savoy cabbage
  • 1/2 head Napa cabbage
  • 1 bulb fennel
  • 1 medium apple with good flavor, such as Fuji or Gala, and some lemon juice.
  • small chunk red onion (no more than 1" cube altogether)
  • 2 c. minced parsley
  • 1 t.celery seed
  • 1 recipe French-style salad dressing: see in my recipes, http://www.grouprecipes.com/36328/french-style-incredibly-good-salad-dressing.html

Directions
  1. Get out your food processor and the blades for fine grating and fine slicing.
  2. Grate the carrots, set aside.
  3. Finely slice the radicchio, cabbages, fennel.
  4. Core, quarter, and finely slice the apple, and sprinkle with lemon juice.
  5. Grind the celery seed to a powder.
  6. Combine all these in a large bowl (no, really, a LARGE one) .
  7. Distribute the salad dressing and mix in gently.
