Lazy Days Southern Breakfast Cups

- 2 cups cooked grits(cook grits according to package directions with one exception, use half milk in place of 1/2 the water, just lower heat when adding milk) shopping list
- 1 stick butter(1/2 to be used to scramble eggs in) shopping list
- 4 eggs, scrambled(fluffy: add 1/3 cup milk or half and half to eggs and whip scramble in frying pan with 1/2 of the butter) shopping list
- salt and pepper to taste shopping list
- 1 cup or more shredded mild or medium cheddar cheese shopping list
- 1 cup of one or more of the following cooked meats (bacon(crispy), sausage, or ham) shopping list
- 12, 16, or 20 oz Hot and cold type disposable cups shopping list

How to make it
- Cook grits by using package directions but substitute 1/2 the water for milk or cream. (this makes them softer and not so gritty)
- Beat or whisk eggs with milk.
- Season with salt and pepper and scramble(fluffy not dry) in butter
- Stir remaining butter into hot grits and season with salt and pepper.
- Divide grits evenly and place in 4 (12, 16, or 20 oz. cups)Hot and cold cups work best!
- Spoon eggs evenly over each cup of grits
- Top each cup with meat choice
- Top with cheese
- Keep warm until ready to serve or refrigerate and heat in microwave(if refrigerating, I have found that I needed to make grits thinner by adding more milk or water)
- * You can add diced tomatoes and grilled onions and bell pepper to make Texmex cups or salsa and pepperjack cheese for Mexican cups, also green onions can be added. For a seafood version, saute shrimp or crawfish tails and green onions in butter, add a dash of Creole seasoning and you have a creole version! The possibilities are unlimited!

What a great idea. My autistic grandson is learning to use the microwave, if i spend a few days showing him the numbers to use and the power settings he will be able to cook these with out me over his shoulder. Thanks for such a great post!
