Ingredients
  • 4 small waxy potatoes
  • 2 lg chicken breasts halved
  • 2 eggs ( hard boiled) sliced
  • 2 cloves garlic crushed
  • 4 slices ginger
  • 1 tsp tumeric
  • 1 tsp black pepper
  • 1/4 cup deep fried onion
  • 8 cups chicken broth
  • 3 djeruk purut leaf
  • 1 tsp sereh powder
  • 2 cups japanese bean thread soaked in boiling water
  • 4 Thai peppers chopped
  • 1/2 cup chopped scallions

Directions
  1. Boil the potatoes in their skin, peel and set aside. Place the garlic, 1/4 cup of the stock,ginger, peppers ,turmeric, black pepper,fried onion in a processor and blend into a paste, set aside.
  2. In a soup pan bring the stock to a boil add the chicken breasts and reduce heat to a simmer and simmer for 10 minutes. Remove breasts and blot dry and set aside. Heat oil in a saute pan and add the chicken , brown on both sides. Cut into bite sized pieces and add back to the soup pot. Add the quartered potatoes, pureed mixture,djeruk and sereh simmer for 20 minutes. Add some bean thread ( strain first) to individual bowls, ladle in some soup and garnish with the sliced egg.

Djeruk purut leaf is Kaffir lime leaves. Sereh powder is lemongrass powder. Bean thread is the Japanese bean thread noodles. These ingredients can be found at an Asian Food Market.
