How to make it

  • Boil the potatoes in their skin, peel and set aside. Place the garlic, 1/4 cup of the stock,ginger, peppers ,turmeric, black pepper,fried onion in a processor and blend into a paste, set aside.
  • In a soup pan bring the stock to a boil add the chicken breasts and reduce heat to a simmer and simmer for 10 minutes. Remove breasts and blot dry and set aside. Heat oil in a saute pan and add the chicken , brown on both sides. Cut into bite sized pieces and add back to the soup pot. Add the quartered potatoes, pureed mixture,djeruk and sereh simmer for 20 minutes. Add some bean thread ( strain first) to individual bowls, ladle in some soup and garnish with the sliced egg.

    sometimes, in Indonesia we add bean sprout and also noodles. It taste good too...

    Djeruk purut leaf is Kaffir lime leaves. Sereh powder is lemongrass powder. Bean thread is the Japanese bean thread noodles. These ingredients can be found at an Asian Food Market.
