Caramel Chocolate Pecan Pie Recipe
CARAMEL CHOCOLATE PECAN PIE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Goebel Estate in Royse City, Texas in 1988.

Ingredients
  • 2 cups pecans finely chopped
  • 1/4 cup granulated sugar
  • 1/4 cup butter melted
  • Filling:
  • 14 ounce package caramels
  • 1/4 cup milk
  • 1 cup chopped pecans
  • 8 squares semisweet chocolate
  • 1/3 cup milk
  • 1/4 cup powdered sugar
  • 1/2 teaspoon vanilla

Directions
  1. Preheat oven to 350.
  2. Mix pecans, sugar and butter then press onto bottom and up sides of 9" pie plate.
  3. Bake 15 minutes then cool completely.
  4. Melt caramels with 1/4 cup milk in heavy saucepan over low heat stirring until smooth.
  5. Pour over crust then sprinkle with pecans.
  6. Stir chocolate, milk, powdered sugar and vanilla in heavy saucepan.
  7. Cook over very low heat until just melted then pour over caramel pecan filling.
  8. Spread to edge of pie then refrigerate.
  9. Serve with whipped topping if desired.
