Pedernales River Chili

- 4 pounds coarsely ground beef shopping list
- 1 large onion, chopped shopping list
- 2 cloves garlic, finely chopped shopping list
- 1 tsp Mexican oregano shopping list
- 1 tsp ground cumin shopping list
- 6 tsp red chili powder shopping list
- 2 (16oz) cans tomatoes shopping list
- salt (to taste) shopping list
- 2 cups hot water shopping list
How to make it
- Put meat, onion and garlic in large pot; sear until browned
- Add remaining ingredients
- Bring to a boil; lower heat; simmer, covered, 1 hour
- Let cool, then refrigerate
- Skim congealed fat from top
- Reheat to serve
