An easy Tex-Mex chili taken from e-cookbook "God Bless Texas"

Ingredients
  • 4 pounds coarsely ground beef
  • 1 large onion, chopped
  • 2 cloves garlic, finely chopped
  • 1 tsp Mexican oregano
  • 1 tsp ground cumin
  • 6 tsp red chili powder
  • 2 (16oz) cans tomatoes
  • salt (to taste)
  • 2 cups hot water

Directions
  1. Put meat, onion and garlic in large pot; sear until browned
  2. Add remaining ingredients
  3. Bring to a boil; lower heat; simmer, covered, 1 hour
  4. Let cool, then refrigerate
  5. Skim congealed fat from top
  6. Reheat to serve
