Adapted from the Litehouse family's Salad Cookbook, this is lite 'hot days' summer fare and is great for brunch or dinner. Croutons may be added or serve with tasty crackers.

Ingredients
  • 1 pkg (6 oz.) mixed lettuce
  • 1/4 cup red onion, finely chopped
  • 1/2 cup celery, sliced
  • grape tomatoes
  • 2/3 cup fresh mango, diced (substitute: green peas)
  • 1/4 cup red bell pepper, julienne sliced
  • 1 ripe avocado, sliced
  • 8 oz. small cooked shrimp and/or lump crab meat
  • Litehouse® Lite Thousand Island or Lite Ranch Dressing

Directions
  1. In a medium bowl toss together mixed lettuce, onion, celery, mango, red bell pepper.
  2. Top with avocado and cooked lump crab or seafood of your choice.. Drizzle lightly with dressing and serve with a bowl of dressing on the table.

Very nice! Even before trying it I can tell by the ingredients that it tastes delicious. Which way do you like it better; with mango or the peas? Thanks!


The colors Red, Purple, Yellow and Green the textures crunchy, firm and soft provide a rainbow for the eyes and a symphony for my pallet, the flavors meld together in a light Ranch Dressing to create this wonderful Seafood Salad any Merry Mermaid would cherish.
