These are a staple at our casual family get togethers...I took "Aunt Vic's" recipe and kicked it up a notch!

Ingredients
  • 2 lb frozen shredded hashed brown potatoes, thawed (I've never thawed them first)
  • 1/2 C melted butter
  • 1/2 C chopped onion (optional-I almost always use dried minced onion in this recipe)
  • 1/2 C chopped red bell pepper (optional-I like to use a combo of whatever color peppers I have on hand...the more the better!)
  • 1 tsp sea salt
  • 1/4 tsp pepper
  • 1-2 tsps garlic salt
  • 1/2 tsp crushed red pepper
  • 10 oz can cream of chicken soup (low fat, no problem)
  • 1 C sour cream (I always use fat free w/excellent results)
  • 2 C shredded cheddar cheese

Directions
  1. 1. Preheat oven to 350.
  2. 2. Combine potatoes, butter, onions, peppers, salt, and pepper in bowl. Mix well.
  3. 3. Add soup, sour cream, and cheese. Mix well.
  4. 4. Pour into 9X13 baking dish (spray w/non stick cooking spray, first).
  5. 5. Bake for 45 minutes.

This sounds great. I used to love the shredded hash browns my high school use to make. Hard to visualize what this ends up being without a pic (woefully visual dude) but the ingredients sound good. Haven't had shredded hash browns of any kind probably since then...


This is very similar to a recipe I've made before. I've never used the red pepper or pepper flakes, so I'm anxious to try it as I know I'll love those flavors!


I have never used sea salt or bell peppers. Great idea!


Is this a new picture? Looks tasty but, man, that dish is not meant to be seen as close as the full size pic takes you...


LOL! Someone on our MySpace asked if that pic was before or after consuming!!! They don't look pretty, but they do taste awesome!
