Aunt Vics Cheesy Potatoes

- 2 lb frozen shredded hashed brown potatoes, thawed (I've never thawed them first) shopping list
- 1/2 C melted butter shopping list
- 1/2 C chopped onion (optional-I almost always use dried minced onion in this recipe) shopping list
- 1/2 C chopped red bell pepper (optional-I like to use a combo of whatever color peppers I have on hand...the more the better!) shopping list
- 1 tsp sea salt shopping list
- 1/4 tsp pepper shopping list
- 1-2 tsps garlic salt shopping list
- 1/2 tsp crushed red pepper shopping list
- 10 oz can cream of chicken soup (low fat, no problem) shopping list
- 1 C sour cream (I always use fat free w/excellent results) shopping list
- 2 C shredded cheddar cheese shopping list
How to make it
- 1. Preheat oven to 350.
- 2. Combine potatoes, butter, onions, peppers, salt, and pepper in bowl. Mix well.
- 3. Add soup, sour cream, and cheese. Mix well.
- 4. Pour into 9X13 baking dish (spray w/non stick cooking spray, first).
- 5. Bake for 45 minutes.
