Spinach Stuffed Eggs Recipe

Ingredients

12 hard-cooked eggs, peeled

3 ounces cream cheese, softened

1/3 cup grated Parmesan cheese

1/3 cup sour cream

2 tablespoons chopped scallions

1/2 seasoned salt, if desired

1/4 teaspoon cayenne pepper

1 (10-ounce) package frozen chopped spinach, thawed and squeezed dry

Fresh chives for garnish, optional

Directions

Cut eggs in half lengthwise.

Remove yolks and reserve.

In a medium bowl, blend together cream cheese, Parmesan cheese, sour cream, scallions, reserved yolks, seasoned salt, if desired, and pepper.

Stir in spinach and mix well.

Spoon or pipe into egg white halves and garnish with chives, if desired.

Cover and refrigerate until firm, about 1 hour. Serve cold.

It's hard for me to think of anything but my usual mayo, mustard, pickles etc in my "devilled eggs", but THIS recipe is definitely something totally different...what a great summer bbq idea - I gotta try this. Thanks, GG!
