Cranberry-Champagne Jelly Recipe
A good Jelly,I like it as will as my Sweet Green Pepper Jelly.

Ingredients
  • 3 Cups Cranberry Juice Cocktail
  • 1/4 Cup Orange Juice
  • 1 Tablespoon Grated Orange Zest
  • 1 Package (1-3/4oz) Powdered Fruit Pectin
  • 4 Cups Sugar
  • 1-1/4 Cups (Flat) Champagne

Directions
  1. In a large heavy pan,combine cranberry juice,orange juice,orange zest,and pectin over medium high heat.
  2. Bring to a rolling boil.
  3. Add sugar.
  4. Stirring constantly.
  5. Bring to a rolling boil again,and boil 1 minute.
  6. Remove from heat,stir in champagne.
  7. Skim off foam.
  8. Spoon jelly into heat resistant jars.
  9. Cover and cool to room temperature.
  10. Store in refrigerator
  11. Makes 6 Cups of Jelly
