Thai Fresh Noodle Salad With Chicken Recipe

Ingredients

1 Bag fresh chinese noodles (found in produce section)

2 Chicken breasts, seasoned, cooked, and chopped

Soya sauce (I use light..enough to coat noodles nicely..don't be shy)

1 Green pepper chopped or more

1 Yellow pepper chopped or more

1 Red pepper chopped or more

2 Cups baby bok choi chopped or more

6 Green onions chopped or more

1/2 Cup cashews or peanuts chopped or more

Thai Sesame Dressing & Marinade (I use about 1/2 a 12 oz bottle)

(I use one called Manzanah Chawah Thai Sesame Dressing and Marinade found in the Deli section)

Directions

Place noodles in a large bowl/pot and cover with boiling water, let stand for 10 minutes and then drain.

In a large bowl/pot (big enough for mixing everything..with a little elbow room) add enough soya sauce to coat noodles, mix well.

Add chopped seasoned chicken breast, chopped peppers, chopped bok choi, chopped green onions.

Add enough Thai Sesame dressing and marinade to coat all and mix well.

Add nuts prior to serving.

Can be made ahead of time to let the flavours meld and get to know eath other intimately or can be served sooner when they are only kissing cousins....
