How to make it

  • In 1 gallon pot fry onions in butter on low to med heat until browned, stir frequently . Lower heat is better, might take 20 mts or so. Don't burn.
  • add flour if you want to have a thicker soup, stir for a few mts to cook
  • add stock, wine, salt and pepper
  • bring to a boil then cover and simmer for 30 mts
  • Toast french bread slices the way you find easiest
  • add them to bottom of bowls
  • sprinkle with parmesan
  • ladel soup over bread
  • cover with about 1/2 cup of gruyere
  • I do the last 2 steps at the table when course is due for serving
