How to make it

  • Cut chicken into thin slices 2” long cutting across the grain.
  • Put into a bowl together with soy sauce, rice wine, ginger, cornstarch and 1 teaspoon sesame oil.
  • Mix well then allow mixture to marinate for 20 minutes.
  • Heat oil in wok until it is very hot then remove chicken from marinade with a slotted spoon.
  • Add to pan and stir fry 2 minutes then remove and leave to drain in a colander.
  • Pour off most of the oil leaving about 2 teaspoons.
  • Reheat pan over high heat then add chilies and stir fry 10 seconds then return chicken to pan.
  • Add remaining ingredients and stir fry 4 minutes mixing well then serve immediately.

    This is a great recipe and it's almost identical to the one I use. And it beats any orange chicken you'll buy out. Nice recipe!
