Chicken Catch A Tory

- 1 2 1/2 to 3 lb. chicken cut up, skin removed shopping list
- olive oil shopping list
- 1/4 lb. of thick cut bacon shopping list
- 1 very large onion sliced shopping list
- 2 cloves of minced garlic shopping list
- Large can of of crushed red tomatoes 28 ounces shopping list
- 8 oz of sliced fresh mushrooms shopping list
- salt and pepper shopping list
- 1/4 tsp crushed red pepper shopping list
- 1/2 tsp of dried basil shopping list
- 1/4 tsp of oregano shopping list
- 1/2 cup of dry marsala wine shopping list
How to make it
- Wash and cut the chicken in serving pieces. Remove skin
- Alternately leave the skin on and brown the chicken pieces in the bacon fat, see below.
- Thinly slice the onion and brown in in some olive oil.
- When it is well browned, remove from the skilet and reserve on a plate.
- In same skillet, cook the bacon until lightly browned.
- (Brown chicken with skin at this point)
- Put onions in slow cooker, top with bacon, mushrooms, chicken, tomatoes and herbs.
- Salt and pepper generously.
- Pour in marsala or sub with red wine..
- Continue cooking on low for 5/6 hours..

- If the sauce dries out too much during the cooking add a spoonful of hot chicken broth.
- During the Revolutionary War, there was a small encampment of patriot soldiers the woods. Before they went to bed that night, they tied chickens (they were saving them for a special meal when needed) to the trees around the campground.
- Sure enough, some British soldiers were stumbling through
- the woods that night and frightened the chickens. Their screams and clucks woke the Patriots and they were able to defeat and capture the entire group of British soldiers. A
- few nights later, the cook prepared the chickens for dinner.
- The soldiers said, "This is really good. What do you call
- it?" The chef said that in honor of these special chickens who
- saved their lives, he called it "Chicken Catch a Tory."
