Ingredients
  • 1 2 1/2 to 3 lb. chicken cut up
  • 1/2 lb. of fresh peeled tomatoes
  • 1/4 lb. of thick cut bacon
  • 1 very large onion
  • olive oil
  • salt and pepper
  • 1/2 cup of dry Marsala Wine

Directions
  1. Wash and cut the chicken in serving pieces.
  2. Thinly slice the onion and brown in in some olive oil.
  3. Wehn it is well browned, remove from the skilet and reserve on a plate.
  4. In same skillet, cook the bacon until lightly browned.
  5. Add the chicken and brown for 10 minutes.
  6. Sprinkle with wine and allow to evaporate.
  7. Add tomatoes and browned onions back into the skillet.
  8. Salt and pepper generously.
  9. continue cooking very slowly uncovered for 1/2 hour.
  10. Cover and continue cooking until the chicken tests done.
  11. If the sauce dries out too much during the cooking add a spoonful of hot chicken broth.
