Ingredients
- 1 2 1/2 to 3 lb. chicken cut up
- 1/2 lb. of fresh peeled tomatoes
- 1/4 lb. of thick cut bacon
- 1 very large onion
- olive oil
- salt and pepper
- 1/2 cup of dry Marsala Wine
Directions
- Wash and cut the chicken in serving pieces.
- Thinly slice the onion and brown in in some olive oil.
- Wehn it is well browned, remove from the skilet and reserve on a plate.
- In same skillet, cook the bacon until lightly browned.
- Add the chicken and brown for 10 minutes.
- Sprinkle with wine and allow to evaporate.
- Add tomatoes and browned onions back into the skillet.
- Salt and pepper generously.
- continue cooking very slowly uncovered for 1/2 hour.
- Cover and continue cooking until the chicken tests done.
- If the sauce dries out too much during the cooking add a spoonful of hot chicken broth.
