How to make it

  • Brush both sides of chicken with barbecue sauce; grill or broil about 5 inches from heat source about 6 minutes per side; or until juices are clear. Meanwhile, in a large bowl, combine lettuce, tomato, 1/2 cup cheese, red pepper, corn, black beans, olives and green onions; mix well.
  • To serve, divide lettuce mixture onto 4 serving plates. Cut chicken crosswise into 1/2 inch thick slices; arrange over lettuce. Drizzle salads with Litehouse® Barbeque Ranch dressing and sprinkle with remaining 1/2 cup cheese.

    I was thrilled that you advised us more on the health and salt issue in the U.S.
    This recipe like many of yours reflect more of the healthy recipes advised by todays highly regarded nutritionist. My point is this Bbq Ranchero Salad delivers loads of flavor and is fulfilling nutritionally too
