Sabayon Recipe
Made with Marsala or a favored liquor becomes a delightful addition over fresh almond cake.

Ingredients
  • For each person:
  • 1 egg yolk
  • 1 tbsp of sugar
  • 2 tbsp of dry white wine or sub Marsala or orange liquor

Directions
  1. Place the ingredients in a bowl and whip over warm water until light and fluffy.
  2. Put in a serving bowl and refrigerate until ready to serve.
  3. Alternately serve warm over almond cake.
  4. Optional flavorings, real vanilla, rind of orange or lemon if desired

I've seen this done by several chefs on FoodTV, but have never been brave enough to try it. It doesn't really sound that difficult does it? Just maybe....

Give it a whirl, I use my balloon whisk and a big bowl over simmering water. It fluffs nicely that way. Just watch out from the bat wing swing of the arms...hate that part of aging, the old lady wings. LOL


This does sound interesting....about the bat wings....that is that friendly muscle that keeps waving!!
