Bourbon Marinated Chicken Breasts Recipe
This recipe is from "The Florida Cookbook: From Gulf Coast Gumbo To Key Lime Pie", and it really is good! The recipe is for two, but multiplying is no problem; use just enough marinade to cover chicken. Any extra can be frozen.

  • 1/2 cup bourbon
  • 1/4 cup soy sauce
  • 1 Tablespoon prepared mustard
  • 2 green onions or scallions, including tops, sliced thin
  • 2 teaspoons sugar
  • Dash Worcestershire sauce
  • 2 boneless chicken breasts with skin removed

Directions
  1. Mix together all of the ingredients except the chicken, blending until the sugar and mustard are dissolved.
  2. Place the chicken in a shallow dish, add the marinade, and turn the chicken to coat well.
  3. Cover and marinate in the refrigerator for --at least-- 1 hour, turning the chicken occasionally.
  4. Remove the chicken from the marinade; reserve the marinade.
  5. Grill on an outdoor grill over a medium fire.
  6. Brush with the marinade several times while cooking, 8 to 10 minutes total grilling time.
  7. Test with a sharp knife near the center.
  8. If they are tinged with red, grill a minute or two longer.
