How to make it

  • Rinse Beans.
  • Add 2 1/2 quarts of water. Cover and bring to a boil.
  • Simmer for 2 minutes.
  • Pull off heat and let stand covered for 1 hour.
  • Add ham bone, garlic and bay leaf.
  • Simmer covered for 2 hours
  • Add veggies and simmer for 1 hour.
  • Pull out the Ham Bone and cut meat off the bone.
  • Remove Bay Leaf
  • Mash some of the beans against the side of the pot to thicken the soup a bit.
  • Return the meat to the pot and bring to a boil.
  • Serve (Great with corn bread).
  • Some like to add a bit of Tobasco to their individual bowls.
