Chickpea Dal Recipe
One of my fav "bean" dishes this is my take on vegetarian times

Ingredients
  • 2 cups roughly chopped tomatoes
  • 1 1/2 cups coarsely chopped onion
  • 1 2inch piece fresh ginger, peeled and cut coarsely
  • 1 1/2 T curry powder, use favourite and to taste
  • 2 15oz cans chickpeas, drained and rinsed
  • 1 cup plain yogurt
  • cilantro
  • slivers of chili or red bell pepper

Directions
  1. In a food processor or blender puree tomatoes, onion, and ginger until smooth
  2. Transfer mixture to a large skillet, stir in curry powder, and cook over medium heat, stirring occasionally, approx 5 minutes
  3. Reduce heat to low and stir in chickpeas.
  4. Cook, stirring occasionally until heated through
  5. let cool for a few minutes and stir in yogurt or use as a topping
  6. Serve over favourite rice & garnish with fresh cilantro and chili slivers
