Chickpea Dal

- 2 cups roughly chopped tomatoes shopping list
- 1 1/2 cups coarsely chopped onion shopping list
- 1 2inch piece fresh ginger, peeled and cut coarsely shopping list
- 1 1/2 T curry powder, use favourite and to taste shopping list
- 2 15oz cans chickpeas, drained and rinsed shopping list
- 1 cup plain yogurt shopping list
- cilantro shopping list
- slivers of chili or red bell pepper shopping list
How to make it
- In a food processor or blender puree tomatoes, onion, and ginger until smooth
- Transfer mixture to a large skillet, stir in curry powder, and cook over medium heat, stirring occasionally, approx 5 minutes
- Reduce heat to low and stir in chickpeas.
- Cook, stirring occasionally until heated through
- let cool for a few minutes and stir in yogurt or use as a topping
- Serve over favourite rice & garnish with fresh cilantro and chili slivers
