Ingredients

1/2 cup unbleached white flour

1/2 cup barley flour

2/3 cup whole wheat pastry flour

1 cup sugar

3/4 cup unsweetened cocoa

1/4 cup dry buttermilk powder

2 teaspoons baking soda

1 teaspoon baking powder

1/2 teaspoon salt

1 tablespoon instant coffee

1 egg white

12 oz diet root beer

1/2 cup water

Directions

Preheat oven to 350°F.

Stir together flours, sugar, cocoa, buttermilk, baking soda, baking powder, salt and coffee in a large bowl.

Beat in egg white, root beer and water with electric beaters for 2 minutes.

Pour into a greased 9" x 13" rectangular pan, or two 9" round pans.

Bake for about 35 to 40 minutes.
