Southwest Chicken And Rice Recipe
This is a great one dish meal. It is extremely fast and easy to make and the flavors are great.

Ingredients
  • 3/4 pound skinless, boneless chicken breast
  • 2 tablespoon olive oil
  • 1 15 oz jar of salsa
  • 3/4 cup chicken broth
  • 1/2 cup greeen bell pepper
  • 1/4 cup sliced ripe olives
  • 1 cup quick cooking rice
  • 1/2 cup shreaded chedar cheese or Monterey Jack cheese

Directions
  1. Cut chicken into 1" pieces.
  2. In a large skillet cook and stir chicken and bell pepper in hot oil over medium heat until chicken is no longer pink. (3 to 4 minutes)
  3. Stir in salsa, chicken broth and olives and bring to a boil.
  4. Stir in rice, remove from heat. Sprinkle with cheese.
  5. Cover and let stand about 5 minutes, or until rice is tender.

  7. This can also be made with regular cooked rice. I like to use cooked brown rice.
