Honey Curry Chicken

- 1/4 C butter or margarine, melted shopping list
- 1/4 C honey shopping list
- 1/4 C prepared mustard (I like to use Dijon) shopping list
- 1/4 tsp salt shopping list
- 1/2 to 1 tsp curry powder shopping list
- 3 lbs chicken pieces skinned (breasts-preferred in our house) shopping list
How to make it
- Combine the first 5 ingredients; stir well
- Dip chicken into honey sauce, coating all sides
- Place chicken in a greased 13 x 9 x 2 inch baking dish
- Reserve remaining sauce
- Bake uncovered at 375 degrees for 1 hour-basting occasionally w/remaining sauce

I liked this. I used boneless, skinless chicken thighs and cooked it in my new rotisserie oven. I think I used a "light" curry powder as I wasn't sure I tasted those flavors and I think I might try a brown mustard next time and leave out the salt. I ...more
