RHUBARB DREAM BARS

- Crust: shopping list
- 1 C. flour shopping list
- 5 T. powdered sugar shopping list
- 1/2 C. (1 stick) COLD butter shopping list
- Filling: shopping list
- 2 eggs shopping list
- 3/4 C. sugar shopping list
- 1/4 C. flour shopping list
- 1/2 tsp. salt shopping list
- 2 C. cut up rhubarb shopping list
How to make it
- Heat oven to 350 degrees.
- In a medium bowl, whisk together flour and powdered sugar. Cut in butter until mixture resembles coarse crumbs. Pat evenly into the bottom of an 8-inch square baking pan. Bake about 15 minutes, until very lightly browned around the edges.
- In the meantime, mix together eggs, sugar, flour, and salt in another medium bowl. Stir in rhubarb. Pour mixture evenly over hot crust and bake 20-25 minutes, until rhubarb is tender (use a sharp knife inserted in the middle to test). Cool completely in pan set on a wire rack. Cut into 9 squares to serve and top servings with whipped cream or ice cream, if desired.
