How to make it

  • Heat oven to 350 degrees.
  • In a medium bowl, whisk together flour and powdered sugar. Cut in butter until mixture resembles coarse crumbs. Pat evenly into the bottom of an 8-inch square baking pan. Bake about 15 minutes, until very lightly browned around the edges.
  • In the meantime, mix together eggs, sugar, flour, and salt in another medium bowl. Stir in rhubarb. Pour mixture evenly over hot crust and bake 20-25 minutes, until rhubarb is tender (use a sharp knife inserted in the middle to test). Cool completely in pan set on a wire rack. Cut into 9 squares to serve and top servings with whipped cream or ice cream, if desired.

    Let me know what you think, babs! My aunt shared the recipe with me and I think the crust is the richest I've ever had in something that isn't a cookie! I want to try it in my lemon bar recipe next time I make it.
