How to make it

  • In a cast-iron skillet fry the chortizo with the onion and bell pepper over medium heat until the sausage is cooked through and the veggies are soft
  • pour off and discard any fat from the skillet
  • arrange the sausage in a layer in the skillet and sprinkle the cheese over it
  • spoon the cornbread batter over the cheese layer
  • bake in a 400' oven for 20 minutes or until the cornbread is lightly browned
  • remove skillet from the oven
  • let dish stand for 5 minutes
  • run knife around the edge of the cornbread and invert the skillet onto a plate.
  • serve immediately
