Chorizo Upside Down Cornbread

- 1 pound bulk chorizo or chipotle chorizo shopping list
- 1 medium onion, chopped shopping list
- 1 medium green bell pepper, chopped shopping list
- 1 cup ( 4-ounces ) grated mild or medium cheddar cheese shopping list
- 1 recipe of your favorite corn bread shopping list
How to make it
- In a cast-iron skillet fry the chortizo with the onion and bell pepper over medium heat until the sausage is cooked through and the veggies are soft
- pour off and discard any fat from the skillet
- arrange the sausage in a layer in the skillet and sprinkle the cheese over it
- spoon the cornbread batter over the cheese layer
- bake in a 400' oven for 20 minutes or until the cornbread is lightly browned
- remove skillet from the oven
- let dish stand for 5 minutes
- run knife around the edge of the cornbread and invert the skillet onto a plate.
- serve immediately
