Crispy Potato-Tuna Patties Recipe
This is my own concoction, I've made them for ages & usually make them when it's about time to buy groceries & there's no more meat in the freezer!

Ingredients
  • 6 medium-sized potatoes; unpeeled & washed
  • 2 cans ( 6oz. each ) tuna packed in water ( I like the low-sodium tuna); drained well
  • 1 medium onion; small dice
  • 2 large cloves garlic; minced
  • 3 large eggs
  • 2 Tablesps. fresh parsley; minced
  • 2 Tablesps. roasted red pepper (packed in water, not vinegar); sliced in small strips
  • 1 and 1/2 teasps. Goya adobo seasoning ( one with blue cap )
  • 1 teasp. black pepper
  • 1/4 teasp. cayenne pepper
  • about 3 Tablesps. vegetable oil

Directions
  1. In a large pot boil the unpeeled potatoes until soft but not mushy. Remove from heat. Put cooked potatoes in a bowl of cold water & allow to cool until they can be handled. While potatoes are cooling, put the diced onion & garlic in a small fry-pan, with a bit of oil & saute until lightly browned. In a large bowl put the browned onion/garlic, the 2 cans well-drained tuna, 1 egg, all the remaining seasonings. Peel the cooled potatoes & crumble them, by hand, into the bowl (they should have little chunky pieces). Next, mix all the ingredients in the bowl very well, by hand. Form into patties about 3 inches in diameter & about 1 inch thick.When all patties are formed, beat the two remaining eggs in a small bowl with 1 and 1/2 teasps. water. Beat until yolk, whites & water are all well blended. In a heavy skillet over medium heat add 2 Tbsps. vegetable oil . Dip each pattie in the egg mixture then fry 4 or 5 patties at a time ( don't crowd skillet). Fry until patties are very well-browned & crispy . When you add next batch of 4 or 5 patties, add 2 more Tbsps. veg. oil, Do this with each batch.When fried deep golden on both sides , remove patties to paper towels to drain & then serve. I usually serve these with corn-on-the-cob & a green salad.

This sounds really good...but...I don't mean to be an airhead...what is goya adobo seasoning?? Aside from not knowing what that is, it looks so good I bookmarked it!


Yummy and economical. I've tried a similar thing with leftover mash, but this looks better. :-)
