Apple Nut Cake

- 3 1/2 tart apples, peeled shopping list
- 1 cup chopped walnuts or pecans shopping list
- 1 1/2 cups vegetable oil shopping list
- 1 1/2 cups sugar shopping list
- 1/2 cup brown sugar,packed shopping list
- 3 lg. eggs shopping list
- 3 cups all-purpose flour shopping list
- 2 tsp cinnamon shopping list
- 1 tsp baking soda shopping list
- 1/2 tsp freshly grated nutmeg shopping list
- 1/2 tsp salt shopping list

- GLAZE: shopping list
- 3 Tbsp butter shopping list
- 3 Tbsp light brown sugar shopping list
- 3 Tbsp sugar shopping list
- 3 Tbsp heavy cream shopping list
- 1/2 tsp vanilla shopping list
How to make it
- Preheat oven to 325F ( 160C). Generously grease and flour a 10" tube pan.
- In a bowl, combine oil and sugars.
- Add 3 eggs and beat well.
- In a separate bowl sift dry ingredients. Add to first mixture and blend thoroughly.
- Peel and dice apples into large pieces and fold into batter along with nuts
- Spread batter evenly in pan and bake 75 - 90 minutes ( 1 /14 - 1 1/2 hrs)
- Cool in pan about 20 minutes, then turn onto wire rack.

- To make glaze:
- Combine ingredients in a heavy saucepan and bring to a boil over medium heat.
- Boil 1-3 minutes, spread over warm cake and serve.
