Fiesta Potatoes Recipe
I got this recipe from an estate sale a few years back (one of hundreds of thousands obtained from estate sales) and this is one of my favorites. It is a mean in one potato. So many great flavors. I make them often. Enjoy

Ingredients
  • 8 large baking potatoes
  • 1/2 cup diced red sweet pepper
  • 1 pound lean ground beef
  • 1 package taco seasoning mix
  • 3-1/4 cups cut asparagus
  • 2 cups shredded sharp cheddar cheese
  • 1-1/2 cups whole kernel corn
  • Sour cream
  • 1/2 cup diced red onion

Directions
  1. Bake potatoes at 350 for one hour.
  2. Prepare ground beef with taco seasoning according to package directions.
  3. Add 1/4 cup water to asparagus, corn, onion and sweet pepper then cover and microwave for 4 minutes on high.
  4. Drain and add to meat mixture and cook until asparagus is tender.
  5. Cut open baked potatoes and top with meat mixture.
  6. Top with cheese then warm potatoes in oven for 5 minutes to melt cheese.
