How to make it

  • Finely chop the tomatoes. Finely grate peel from limes, set aside. Drain beans, rinse. Place the beans, garlic and chipotle in a food processor; squeeze in 1T juice from 1 lime. Whirl until beans are pureed, add 1-2T of water if puree is too thick. Scrape into a large wide shallow serving bowl.
  • Place sour cream in a small bowl. Squeeze in 2T lime juice; stir in coriander and lime peel. Spread over bean puree. (If making ahead, cover and refrigerate overnight.
  • To serve bring to room temp. and scatter with the chopped tomatoes, then grated cheddar and then the chopped green onions.
  • Perfect with tortilla chips or pita chips

    This sounds good! We discovered that chipotle helps keep the bugs away! The whole clan went to the mountains and only 3 of us had eaten the left over chipotle chicken before we left. We were the only ones not bugged!!
