I sure would like to know how to tell when a plantain is ripe. Your timing has these cooking like bananas, and the ones I find around here are very firm. Any advice?

The plantain will always be firm even when it looks like an overripe banana. When I make like above I let them get yellow and have black on them too. They must be cooked.
When I make a savory plantain I use them when they are all green.

You can get the plantains when they are green and wait about a week or two until they get yellow with a lot of black on it. They are soft to the touch - if they are not soft yet a quick way to ripe them when they are yellow is to bang them against the kitchen counter a couple of times and in a few minutes they are soft and ready to cook. I've been eating these since age 3- for about 50 years now - can be called an expert of fried plantains.
