How to make it

  • Cut each plantain in half crosswise; cut each half lengthwise into 1/4 inch thick slices.
  • Melt butter in a large skillet over medium heat.
  • Add plantains; sprinkle with sugar and cinnamon.
  • Cook 3 to 4 minutes on each side or until golden.
  • Drain on paper towels.

    you can get the plantains when they are green and wait about a week or two until they get yellow with a lot of black on it. They are soft to the touch - if they are not soft yet a quick way to ripe them when they are yellow is to bang them against the kitchen counter a couple of times and in a few minutes they are soft and ready to cook. I've been eating these since age 3- for about 50 years now - can be called an expert of fried plantains.

    Pieplate, Jencathen is right on the money with her comments. Get the plantain when yellow and a little black on them. Cooking time is right on this recipe!

    The plantain will always be firm even when it looks like an overripe banana. When I make like above I let them get yellow and have black on them too. They must be cooked.

    When I make a savory plantain I use them when they are all green.

    I sure would like to know how to tell when a plantain is ripe. Your timing has these cooking like bananas, and the ones I find around here are very firm. Any advice?
