How to make it

  • Cut tomatoes into rough chunks no larger than 3/4" cubes.
  • Crumble feta cheese coarsely over the tomatoes. There should be some big chunks. Feel free to add more if you wish.
  • Julienne the basil and mint (slice *thinly*).
  • If you want some onion, add no more than 2 T, cut very fine.
  • Dress with no more than 2 T. olive oil and at least 2 T red wine vinegar.
  • Taste and correct oil and vinegar if necessary.
  • You may serve this immediately, or let it ripen for up to 45 m.
