Ripe tomato salad

- 1 lb. fresh ripe tomatoes shopping list
- 3-4 oz feta cheese shopping list
- a handful fresh basil leaves shopping list
- a tiny bouquet fresh mint leaves shopping list
- red wine vinegar shopping list
- olive oil shopping list
- minced red onion or scallions, if desired shopping list
How to make it
- Cut tomatoes into rough chunks no larger than 3/4" cubes.
- Crumble feta cheese coarsely over the tomatoes. There should be some big chunks. Feel free to add more if you wish.
- Julienne the basil and mint (slice *thinly*).
- If you want some onion, add no more than 2 T, cut very fine.
- Dress with no more than 2 T. olive oil and at least 2 T red wine vinegar.
- Taste and correct oil and vinegar if necessary.
- You may serve this immediately, or let it ripen for up to 45 m.
