Ingredients
  • 1 lb. fresh ripe tomatoes
  • 3-4 oz feta cheese
  • a handful fresh basil leaves
  • a tiny bouquet fresh mint leaves
  • red wine vinegar
  • olive oil
  • minced red onion or scallions, if desired

Directions
  1. Cut tomatoes into rough chunks no larger than 3/4" cubes.
  2. Crumble feta cheese coarsely over the tomatoes. There should be some big chunks. Feel free to add more if you wish.
  3. Julienne the basil and mint (slice *thinly*).
  4. If you want some onion, add no more than 2 T, cut very fine.
  5. Dress with no more than 2 T. olive oil and at least 2 T red wine vinegar.
  6. Taste and correct oil and vinegar if necessary.
  7. You may serve this immediately, or let it ripen for up to 45 m.

One of my favorite ways to eat tomatoes when they are bursting off the vine - never tried the addition of the mint bouquet, but I will do so now! Thanks!!
