Ingredients

How to make it

  • Coat vegetables in marinade and refrigerate for at least 3 hours.
  • Heat a gas or charcoal grill to medium-high heat.
  • Place veggies on the grill in the following order, waiting at least 5 minutes before adding the next batch: Sweet potatoes, bell peppers, yellow squash, mushrooms, asparagus. Turn once grill marks are set. When veggies are cooked to your preferred tenderness, remove from grill and arrange on platter. Serve with ears of freshly boiled corn on the cob, multi-grain bread and green salad. Enjoy!!

    Vegetables on the grill are my favorite things to grill. I often grill large tomatoes until they start to caramelize and char a little Mmmmmm veggies are so good that way.
