Barbecue Veggie Platter

- VEGETABLES: shopping list
- 1 large sweet potato, cut in rounds shopping list
- 2 to 3 large yellow squash, cut in rounds shopping list
- 1 package of fresh baby portabella mushrooms shopping list
- 1 large red bell pepper, cut in large strips shopping list
- 1 bunch fresh asparagus, ends trimmed shopping list
- marinade shopping list
- 3 cloves fresh garlic, crushed shopping list
- 1 small piece of fresh ginger, grated shopping list
- 1/2 cup vegetable or olive oil shopping list
- 1/4 cup rice wine vinegar shopping list
- 1/4 cup Ponzu or soy sauce shopping list
- juice of 1 lemon or lime + zest shopping list
- Fresh snipped herbs of your choice shopping list
- salt & pepper to taste shopping list
How to make it
- Coat vegetables in marinade and refrigerate for at least 3 hours.
- Heat a gas or charcoal grill to medium-high heat.
- Place veggies on the grill in the following order, waiting at least 5 minutes before adding the next batch: Sweet potatoes, bell peppers, yellow squash, mushrooms, asparagus. Turn once grill marks are set. When veggies are cooked to your preferred tenderness, remove from grill and arrange on platter. Serve with ears of freshly boiled corn on the cob, multi-grain bread and green salad. Enjoy!!
