Ingredients

VEGETABLES:

1 large sweet potato, cut in rounds

2 to 3 large yellow squash, cut in rounds

1 package of fresh baby portabella mushrooms

1 large red bell pepper, cut in large strips

1 bunch fresh asparagus, ends trimmed

MARINADE

3 cloves fresh garlic, crushed

1 small piece of fresh ginger, grated

1/2 cup vegetable or olive oil

1/4 cup rice wine vinegar

1/4 cup Ponzu or Soy sauce

Juice of 1 lemon or lime + zest

Fresh snipped herbs of your choice

Salt & Pepper to taste

Directions

Coat vegetables in marinade and refrigerate for at least 3 hours.

Heat a gas or charcoal grill to medium-high heat.

Place veggies on the grill in the following order, waiting at least 5 minutes before adding the next batch: Sweet potatoes, bell peppers, yellow squash, mushrooms, asparagus. Turn once grill marks are set. When veggies are cooked to your preferred tenderness, remove from grill and arrange on platter. Serve with ears of freshly boiled corn on the cob, multi-grain bread and green salad. Enjoy!!
