As easy to make as mixing up a couple eggs...Can be served as a casserole or cut into 1 inch squares for brunch.

Ingredients
  • 4 jalapenos, seeded and chopped
  • 1 large onion, finely chopped
  • 1 garlic clove, finely chopped
  • 1 pound Cheddar or Monterey Jack cheese, shredded
  • 6 eggs, beaten

Directions
  1. Preheat oven to 350
  2. Spray 9 in. square pan with cooking spray
  3. Spread jalapenos, onion and garlic into bottom of
  4. Cover with cheese
  5. Pour eggs over cheese
  6. Bake for 30 minutes or until firm
