How to make it

  • Cut off top of garlic head so cloves are just exposed
  • put on baking sheet and drizzle a little olive oil on top
  • bake at 350 for about 30-40 mts or until soft
  • allow to cool
  • Squeeze out garlic into mixing bowl
  • add about 1/2 tsp salt
  • mash with spoon to create a smooth paste
  • wisk in egg product and mix thoroughly
  • add oil in a small drizzle while whisking briskly allowing it to incorporate slowly
  • The slower the better for the oil as it needs to form a fine emulsion and not separate
  • add lemon juice and mix thoroughly
  • ####if you don't have the arm for this use a hand blender like I do! LOL
