Roasted Aioli Roasted Garlic Mayonaise

- One head of garlic shopping list
- salt shopping list
- 1 cup+ olive oil (kind depends on dish you are serving this with) shopping list
- 1/3 cup pasteurized egg like EggBeaters (raw eggs can cause problems later) shopping list
- juice of one lemon shopping list
How to make it
- Cut off top of garlic head so cloves are just exposed
- put on baking sheet and drizzle a little olive oil on top
- bake at 350 for about 30-40 mts or until soft
- allow to cool
- Squeeze out garlic into mixing bowl
- add about 1/2 tsp salt
- mash with spoon to create a smooth paste
- wisk in egg product and mix thoroughly
- add oil in a small drizzle while whisking briskly allowing it to incorporate slowly
- The slower the better for the oil as it needs to form a fine emulsion and not separate
- add lemon juice and mix thoroughly
- ####if you don't have the arm for this use a hand blender like I do! LOL
