Roasted Aioli Roasted Garlic Mayonaise Recipe

Ingredients

One head of garlic

salt

1 cup+ olive oil (kind depends on dish you are serving this with)

1/3 cup pasteurized egg like EggBeaters (raw eggs can cause problems later)

juice of one lemon

Directions

Cut off top of garlic head so cloves are just exposed

put on baking sheet and drizzle a little olive oil on top

bake at 350 for about 30-40 mts or until soft

allow to cool

Squeeze out garlic into mixing bowl

add about 1/2 tsp salt

mash with spoon to create a smooth paste

wisk in egg product and mix thoroughly

add oil in a small drizzle while whisking briskly allowing it to incorporate slowly

The slower the better for the oil as it needs to form a fine emulsion and not separate

add lemon juice and mix thoroughly

####if you don't have the arm for this use a hand blender like I do! LOL
