Mandarin Cake Recipe
My sister baked this recently while she was visiting and said I would love it...she was right for sure. This is a moist cake, great for summer BBQ's and for those weight watchers...only 2 points per slice. ENJOY!

Ingredients
  • 1 package yellow cake mix
  • 1 (11-oz) can mandarin oranges, not drained (will use the juice)
  • 1/2 cup applesauce
  • 4 egg whites
  • 1 (8-oz) carton fat-free cool whip
  • 1 (20-oz) can crushed pineapple
  • 1 (1-oz) package fat-free instant vanilla pudding mix

Directions
  1. Preheat oven to 350.
  2. Mix together yellow cake mix, mandarin oranges (with juice), applesauce and 4 egg whites.
  3. Pour mix in 9X13 pan sprayed with PAM or nonstick spray and bake for 30 minutes.
  4. Meanwhile mix together cool whip, crushed pineapple and vanilla pudding.
  5. Once cake has finished and cooled, use pineapple frosting to coat the top of the cake.
  6. Refrigerate until ready to serve.
