This is my version of a stuffed filet mignon steak that my husband and I order at a local restaurant.

Ingredients
  • 2 filet mignons about 1 1/2 to 2 inches thick
  • 4 tablespoons crumbled blue cheese
  • 2 tablespoons butter
  • 2 strips of applewood smoked bacon
  • black pepper to taste
  • Coarse ground sea salt to taste

Directions
  1. Cut a slit in each steak to make a sizable pocket without cutting through.
  2. Sprinkle inside of pockets with salt and pepper to taste.
  3. Stuff each pocket with 2 tablespoons blue cheese and 1 tablespoon butter.
  4. Wrap each filet with a strip of bacon and secure with toothpick. Salt and pepper the tops to taste.
  5. Broil about 4-5 minutes on each side until desired color is obtained.
