Sweet Potatoes with Caramel Sauce

- 4 cups cooked sweet potatoes, mashed shopping list
- 3/4 cup brown sugar, firmly packed shopping list
- 1 teaspoon vanilla shopping list
- 1/2 cup half and half shopping list
- 1 cup chopped pecans shopping list
- caramel sauce shopping list
- 1 cup sugar shopping list
- 1 stick unsalted butter shopping list
- 1/2 cup half and half shopping list
- 1 teaspoon vanilla shopping list
- Pinch of salt shopping list
How to make it
- In large bowl, combine potatoes, sugar, vanilla, and half and half
- Spread the mixture into a buttered 1-1/2 quart casserole
- Make a WELL in center of the potato mixture
- Sprinkle with nuts
- Bake at 350 degrees for about 20 minutes
- CARAMEL SAUCE
- In a saucepan or skillet, combine sugar and butter
- Cook until sugar is golden brown
- Gradually add the 1/2 cup half and half
- Cook 2 minutes
- Stir in salt and 1 teaspoon vanilla
- Remove potatoes from oven
- Pour sauce over the hot potato casserole just before serving
