Garbanzo Guacamole Recipe
A great variation of the original guacamole - very low fat and extremely yummy!

Ingredients
  • 2/3 cup canned garbanzo beans, drained
  • 1 Tbsp lemon juice
  • 2 large cloves garlic, halved
  • 3/4 cup coarsely chopped onion
  • 3/4 cup peeled, cubed avocado
  • 2 Tbsp canned chopped green chiles
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1 cup finely chopped tomato
  • 1/2 cup finely chopped green onion

Directions
  1. Using a food processor, mix beans, lemon juice and garlic. Process 20 seconds, scraping sides of bowl once.
  2. Add chopped onion and next 4 ingredients; pulse 5 times or until mixture is chunky.
  3. Transfer mixture to a medium bowl; stir in chopped tomato and green onions. Cover and chill thoroughly.
  4. Serve with tortilla chips or veggies.

This really is good and good for you. I haven't tried this exact recipe but I make something similar. Years ago I realized that I needed to cut fat and calorie corners and discovered that garbanzo beans make a great replacement for mayonnaise in salad dressings and a wonderful thickener in vegetable soups. I have all the ingredients except the avocado so this will be next Monday Night Football dip. I thank you. Sas
