Basil Jelly With Pineapple Juice

- 8 TBSP. fresh basil .. or .. 4 TBSP. dried basil shopping list
- 1 cup boiling water shopping list
- ........................................................................... shopping list
- 3/4 cup unsweetened pineapple juice shopping list
- 1/4 cup water shopping list
- 1/4 cup lemon juice shopping list
- 1/2 cup herb infusion shopping list
- 3 cups sugar shopping list
- 1/2 bottle of Certo shopping list
- 2 drops each of red and yellow food coloring...( optional ) shopping list
How to make it
- Herb Infusion
- .............................................
- place basil in a small sauce pan and pour boiling water over it
- simmer together uncovered for about 10 minutes
- strain through a cloth lined strainer
- ..................................................................................
- in a non aluminum pan but the pineapple juice, water, lemon juice, 1/2 cup basil infusion, and sugar...
- bring to a boil... add food coloring
- when mixture comes to a boil add 1/2 bottle of Certo
- stir well.. and bring back to a full rolling boil..( a hard boil that can not be stirred down... it will rise up in your pan )
- this recipe says it now ready to take off the heat,... read the directions on the Certo bottle to make sure for herb jellies'''
- take off heat skim the foam off the top ( it is good to eat .. it just doesn't look nice in the jars and it gives you some to try right away!!)
- pour into jars and seal ..

- note: some jellies take up to 2 weeks to set after making..

Plenty of basil in my garden this sound like a good jelly. Basil has a slightly liquorish flavor, When added to the pineapple it should taste exotic.
