Boursin Potatoes

- 2 cups heavy cream shopping list
- 2/3 cup boursin cheese with black pepper shopping list
- 2 tablespoons minced shallots shopping list
- 1 clove garlic minced shopping list
- 2-1/2 pounds new potatoes scrubbed and sliced 1/4" thick shopping list
- 1/2 teaspoon salt shopping list
- 1 teaspoon freshly ground black pepper shopping list
- 3 tablespoons snipped chives shopping list
- 3 tablespoons snipped parsley shopping list
- boursin cheese With Black Pepper: shopping list
- 3 cloves garlic minced shopping list
- 1/2 teaspoon salt shopping list
- 8 ounces cream cheese at room temperature shopping list
- 1/4 cup butter at room temperature shopping list
- 2 tablespoons finely snipped parsley shopping list
- 2 tablespoons coarsely ground black pepper shopping list
How to make it
- Generously butter a rectangular baking dish.
- To make boursin cheese with black pepper make a paste with pressed garlic and salt.
- Combine with cream cheese, butter, parsley and pepper until smooth.
- In heavy saucepan heat cream, boursin cheese, shallots and garlic over medium heat.
- Stir constantly until cheese melts.
- Preheat oven to 400.
- Arrange half of the potatoes in baking dish in slightly overlapping rows.
- Season with salt and pepper then pour half of the cheese mixture over the potatoes.
- Sprinkle with chives then repeat layers with remaining potatoes, salt, pepper and cheese mixture.
- Bake uncovered one hour until potatoes are tender but do not overcook.
- Sprinkle with parsley and serve.

This has got to be one of the most mouth watering recipes I have seen on this site. What a combination from heaven...cheese, potatoes, garlic and parsley-YUM! Okay, that's it. I am going online to buy Boursin right now so I can make this.
