this is a nice and easy finger food type appetizer.... it's a recipe from a chicken cook book ...you can make these hotter and spicier by adjusting the peppers and chili powder. the prep time does not include the marinading time

  • 1 pound chicken wings
  • 2 TBSP. peanut oil
  • 2 TBSP. light soy sauce
  • 2 TBSP. hoisin sauce
  • 2 TBSP. honey
  • 2 garlic cloves, minced
  • ......................................................
  • MARINADE
  • 1 dried red chili
  • 1/2 - 1 teasp. chili powder
  • 1/2 - 1 teasp. ground ginger
  • finely grated rind of 1 lime

Directions
  1. to make the marinade: crush dried chili in a mortar and pestle
  2. mix it with the chili powder, ginger, and the lime rind in a small bowl
  3. thoroughly rub the spice mixture into the chicken
  4. set aside for at least 2 hours to allow the flavors to penetrate chicken
  5. heat oil in wok or skillet
  6. add chicken wings and fry, turning often for about 10 -12 minutes until golden and crispy.
  7. drain off any excess oil
  8. add soy sauce, hoisin sauce, honey and garlic to wok.. turning the wings to coat.
  9. reduce heat and cook for 20 - 25 minutes, turning the wings often
  10. cook until the wings are done all the way through...
  11. serve hot.....
