This is my version of the classic Chinese restaurant beef with broccoli that you can make at home. The prep can be done ahead and it cooks very quickly.

Ingredients
  • 1 pound top round steak
  • 1 teaspoon cornstarch
  • 1 teaspoon sugar
  • 1 tablespoon low sodium soy sauce
  • 1/8 teaspoon white pepper
  • 3 cups broccoli florets
  • 1 small onion, sliced
  • 1 clove garlic; minced
  • 1/2 teaspoon ginger root; grated
  • 1 1/2 cup mushrooms; sliced
  • 3/4 cup chicken broth; divided
  • 1/4 cup oyster sauce
  • 2 tablespoons low sodium soy sauce
  • 2 tablespoons cornstarch
  • 2 tablespoons oil; divided

Directions
  1. Cut beef with grain into 2" strips.
  2. Slice beef across grain into thin slices.
  3. Toss beef with 1 teaspoon cornstarch, sugar, 1 tablespoon soy sauce and pepper, cover and refrigerate for 20 minutes.
  4. Combine 1/2 cup chicken broth, oyster sauce, remaining soy sauce and cornstarch, set aside.
  5. Heat wok, add 1 tablespoon oil and rotate to coat inside.
  6. Add beef, garlic and ginger and stir fry until beef is brown, about 3 minutes.
  7. Remove from wok.
  8. Add 1 tablespoon oil to wok, add mushrooms, onions and broccoli, stir fry 1 minute.
  9. Stir in 1/4 cup chicken broth and beef and heat to boiling.
  10. Stir in cornstarch mixture, cook and stir until thickened, about 1 minute.
  11. Serve with steamed rice.

I love chinese food and one of my favs is chicken and broccoli. I'm sure I can sub beef for chicken.
