Quick Sausage Sauce Piquant Recipe
This is a dish I designed for a catering job many years ago. It is not only quick but very flavorful and so delicious! It is truly a creole style dish that is a crowd pleaser for sure!

Ingredients
  • 1 to 11/2 pounds smoked sausage, sliced
  • 1 1/2 cups diced baked or smoked ham(not honey baked or sweet ham)
  • 1 large onion, chopped or sliced
  • 1 red bell pepper, chopped or sliced
  • 3 stalks of celery, chopped
  • 1 green bell pepper, chopped or sliced
  • 2 cans(15.5 to 16 oz) whole tomatoes, chopped
  • 2 (8oz.)cans of tomato sauce
  • 3 cloves garlic
  • 4 tablespoons butter
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon celery salt
  • 1 bag(16 oz. or less) frozen sliced okra
  • 1/2 teaspoon cracked black pepper
  • 1 cup chicken broth
  • creole spice to taste
  • 1 cup burgundy wine

Directions
  1. In Medium or large pot, Cook onions, celery, garlic, bell peppers, ham and sausage in olive oil and butter until veggies are tender and meat is lightly browned.
  2. Add tomatoes, broth, sauce, spices and bring to a boil.
  3. Add Okra and lower to a med/low simmer.
  4. Cook for 10 minutes on med/low heat.
  5. Season with spices and stir in burgundy.
  6. Cover and cook over low heat for 10 minutes.
  7. Serve over hot cooked rice.
