Nutty Coconut Coffeecake

this is good with a cup of coffee as an afternoon snack or with breakfast..anything with nuts and coconut is fine with me... this is a recipe from a Name Brands Cookbook... I don't know how many servings... it makes a 9-inch cake
Ingredients
- TOPPING...... shopping list
- 2 TBSP. melted butter shopping list
- 2/3 cup flaked coconut shopping list
- 1/3 cup packed dark brown sugar shopping list
- 1/3 cup chopped nuts ... your choice... macadamia, pecans, almond shopping list
- 2 TBSP. evaporated milk shopping list
- ....................................................... shopping list
- BATTER........... shopping list
- 2 cups flour shopping list
- 1/2 cup packed brown sugar......i use light brown shopping list
- 1/4 cup white sugar shopping list
- 2 teasp. baking powder shopping list
- 1/2 teasp. salt shopping list
- 1/4 cup butter shopping list
- 1 cup evaporated milk shopping list
- 1 egg shopping list
- 1 teasp. vanilla shopping list
How to make it
- TOPPING........ pour 2 TBSP. butter into ungreased 9-inch round cake pan
- in bowl combine..... coconut, dark brown sugar, nuts, and 2 TBSP evaporated milk.
- sprinkle over melted butter
- ..............................................................
- BATTER.....
- combine in bowl.... flour, brown sugar, sugar, baking powder, and salt...... cut in 1/4 cup butter
- in small bowl... beat i cup milk, egg, and vanilla together
- stir into the flour mixture just until blended.... Do Not over mix
- pour batter over the nut mixture
- in preheated 350' F oven bake 30 -35 minutes or until a toothpick comes out clean
- cook 10 minutes on wire rack
- invert onto serving plate
