Puff Pastry Raisin Pecan Pinwheels

- 1 sheet frozen puff pastry dough, thawed shopping list
- 1/3 cup sugar shopping list
- 1 TBSP. cinnamon shopping list
- 1/4 cup butter shopping list
- 1/2 cup raisins shopping list
- 1/2 cup finely chopped pecans shopping list
- 1 egg yolk, beaten shopping list
How to make it
- on a lightly floured surface, use a floured rolling pin to roll out pastry an 8 x 12-inch rectangle*****
- in a small bowl ... combine sugar and cinnamon and set aside
- in a small saucepan, melt butter
- add raisins and pecans to butter and stir until well coated
- spread raisin mixture evenly over pastry dough
- sprinkle sugar mixture over raisin mixture
- beginning at the long edge, roll up pastry.
- brush with egg yolk on the long side to seal
- place on a greased baking sheet
- bake in preheated 350' F oven for 20 - 25 minutes or until golden brown
- cool completely....cut into 1-inch thick slices
- makes 12 pinwheels
- ****** don't let the puff pastry dry out..... i do the cinnamon sugar and the melting of the butter first then the pastry dough

I love these but I've had them with walnuts..I will try with pecans which I like better anyway. YUM!
