Ingredients
  • 12 lamb chops, at least 1.5 inches thick
  • 1 ounce of Gorgonzola, crumbled
  • salt and freshly ground pepper

Directions
  1. Cut each chop horizontally at its vertical midpoint, leaving the ends of the two halves attached.
  2. Stuff with Gorgonzola.
  3. Season with salt and pepper.
  4. Broil 5 minutes 2 inches from the heat source.
  5. Flip. Ouch! Don't forget to use a potholder!
  6. Then, broil for another 5 minutes.
