Ingredients
  • 1 can unsalted tomato paste
  • ½ each of green, orange, red, yellow sweet pepper, finely chopped
  • 1 large can diced tomatoes, or 6 large, fresh, diced
  • ½ lb. Lean ground beef
  • ½ lb lean ground pork
  • ½ lb lean ground turkey
  • 6 – 8 shallots, finely chopped
  • 2 whole bay leaves
  • 2 cloves garlic, minced
  • approx 3 tbsp soya sauce
  • approx 1 – ½ cups dry red wine
  • approx 3 large stalks celery, finely chopped
  • approx 3 medium carrots, finely chopped
  • 3 garlic cloves, finely chopped
  • salt & pepper to taste
  • oregano & basil, a good pinch of each

Directions
  1. In a large saucepan, combine the meats. Add about 2 tbsp extra virgin olive oil.
  2. Add the shallots. Lightly brown the mixture, cooking until the shallots are nicely caramelized.
  3. Transfer to large pot, and add:
  4. Diced peppers
  5. Diced tomatoes
  6. Soya sauce
  7. Red wine
  8. Celery and carrots
  9. garlic
  10. bay leaves
  11. oregano and basil, salt & pepper
  12. Cook on medium heat, stirring frequently.
  13. Reduce heat to simmer, and reduce the sauce to thicken.
  14. Remove bay leaves.
  15. Serve over spaghetti, topped with grated Parmesan, or cheese of your choice, garnished with fresh parsley leaf.
  16. Garlic bread goes really well with this dish, as does a fresh, tossed salad.

Will have to try this one when it cools down here(still running 110-116 degrees outside). Been looking for a "cook all day" recipe like my Italian neighbor used to make when I was a kid.
