Crispy Zucchini Sticks

- 1/2 cup pasta sauce or salsa shopping list
- 1/4 cup sour cream shopping list
- 3/4 lb zucchini shopping list
- 2/3 cup seasoned bread crumbs shopping list
- 1/2 cup cornmeal shopping list
- 2 tbsp grated parmesan shopping list
- 2 tbsp minced parsley shopping list
- salt to taste shopping list
- 1/3 cup flour shopping list
- 2 large eggs beaten shopping list
How to make it
- Preheat oven to 450F. Combine sauce and sour cream; set aside.
- Cut each zucchini lengthwise into quarters, cut each quarter crosswise into 3 pieces.
- Combine the breadcrumbs and the next 4 ingredients (thru salt) in a
- shallow dish.
- Dredge zucchini pieces in flour.
- Dip in egg and dredge in breadcrumb mixture.
- Place the zucchini on a large baking sheet coated with garlic cooking spray.
- Bake at 450 for 25 minutes turning once until lightly browned and crisp.
- Serve with sauce.
