Brazil Nut Sensation

- 3/4 cup sifted flour shopping list
- 3/4 cup sugar shopping list
- 1/2 tsp baking powder shopping list
- 1/2 tsp salt shopping list
- 2 pkg pitted dates (about 1 lb) shopping list
- 1 cup well-drained maraschino cherries shopping list
- 3 eggs shopping list
- 1 tsp vanilla shopping list
- 3 cups shelled brazil nuts shopping list
How to make it
- Preheat oven to 300 degrees.
- Grease, then line with wax paper a loaf pan.
- In sifter place flour, sugar, baking powder and salt.
- In a large bowl place nuts, dates and cherries.
- Sift the ingredients these and then mix with your hands until nuts and fruits are well coated.
- Beat eggs until foamy.
- Add vanilla to eggs and stir into nut mixture and mix well.
- Spread in pan evenly.
- Bake for 1 hr. and 45 minutes. Cool in pan on rack for 15 minutes.
- Remove from pan and peel off paper.
- Cool on rack and wrap in foil and store in refrigeragtor.
- Keeps 5 or 6 weeks.
- note: fruits and nuts are whole, not chopped; sliced, this bread is beautiful with large cross-sections.
